Born in Pasig, Philippines, Paolo has been working in the food service industry since he was 9 years old selling his grandmother's rice cakes. He emigrated to North Carolina when he was 15 and started working as a kitchen helper when he was 18. He worked his way up, eventually opening his first restaurant with his father at 29 years old. After 10 years, Paolo is opening his second restaurant with his wife and business partner, Domino.
